This research has as general objective to explore the influence that the increase of prices of foods and the contraction of incomes observed between the years 2019 and 2023 had on the decisions of demand of calories in Peru.
In order to reach the general goal, the following general specific objectives were been proposed:

- To estimate the elasticities income and demand price of food products in Peru, as well as the elasticities of substitution between food products, in 2019 and 2023, differentiating behaviors according to urban and rural area.
- To estimate the elasticities of the demand income and demand price of calories in Peru between 2019 and 2023, differentiating behaviors according to urban and rural area.
- To analyze how it influenced the inflation of foods and the contraction of incomes observed between 2019 and 2023 over the demand of calories in Peru, given the relations arising in the functions of demands estimated, differentiating results according to urban and rural area.
- To develop an alternative measure of vulnerability against the food insecurity based in the demand behavior and given the elasticities price and estimated income. In addition, to estimate the proportion of the population that would be vulnerable against the food insecurity under this alternative measure.
The study had been prepared having as source the National Household Survey (ENAHO), for the years 2019 and 2023, which database is in the institutional website and had been developed by the researcher Mg. Yohnny Gastón Campana Morales, whom currently Works as Associated Economist of Macroconsult S.A.
